Easy Slice Salad

A quick alternative to a leafy green salad to round out the meal

  • 1 ripe tomato, sliced
  • 2 Kirby cucumbers, peeled and sliced
  • 1/4 red onion, sliced into thin half moons
  • 1/3 cup Balsamic Vinegar
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons Dijonstyle mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon black pepper


Place all vegetables in a serving bowl. Mix the dressing ingredients together and drizzle over salad.Serve immediately. This salad can be refrigerated for up to 2 hours before serving.
