Mixed Green Salad with Honey-Basil Dressing

An extremely fresh tasting combination of herbs and greens

  • 2 ripe tomatoes, seeded
  • 1 large beet, shredded
  • 4 cups mixed salad greens, torn
  • 4 tablespoons fresh basil, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons maple syrup
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt


Cut tomatoes in half crosswise. Gently squeeze out the seeds and cut tomato into thin strips. Place in a large bowl along with the beet and lettuce greens. Set aside.Combine basil, lime juice, maple syrup, olive oil and salt in a jar cover and shake vigorously. Pour over lettucebeet mixture and toss gently.
