Crunch Salad with Miso Dressing

Suitable Diets: Raw Foods, Vegan, Vegetarian
Ingredients
2 large carrots, diced
2 bulbs Kohlrabi, peeled and diced
1 cup Mung Bean Sprouts
1/4 red onion, diced
1/2 cup jicima, peeled and diced
2 tablespoons canola oil
1/4 cup water
1/4 cup mellow white Miso
1 1/2 tablespoons Brown Rice Vinegar
2 tablespoons maple syrup
2 tablespoons chopped cilantro
Directions
Place all the vegetables in a large bowl. Combine remaining ingredients in a blender and blend until smooth. Pour over vegetables and mix well. Chill.
