Ground Tofu Skillet Casserole

Everyone needs a macaroni meal once in a while

  • 1 package prepared ground tofu
  • 1 tablespoon canola oil
  • 1 medium green bell pepper, finely chopped
  • 1 medium onion, finely chopped
  • 1 stalk celery, sliced thin
  • teaspoon vegetarian Worcestershire sauce
  • teaspoon black pepper
  • 1 cups low sodium tomato juice
  • 1 cup elbow macaroni, uncooked
  • cup mushrooms, sliced


Heat oil in a large skillet. Add green pepper, onion and celery and saut until soft, about 10 minutes. Add ground tofu, seasonings, tomato juice, macaroni and mushrooms and combine thoroughly. Cover, reduce heat to low and simmer 30 minutes.
