Chilled Cantaloupe Soup

Be sure to buy cantaloupes at their peak of ripeness for this cooling soup

  • 1 cantaloupe, cut into small chunks
  • 3/4 cup unfiltered apple juice
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon vanilla
  • 2 tablespoons fresh mint leaves, chopped


Blend all ingredients except mint in a blender until smooth. Chill. Garnish with mint.
